I never used store-bought BBQ sauces in my life. But I do enjoy a smokey taste and the BBQ-like flavour induced by some chosen spices. Did you actually know that you could make your own mustard at home from mustard seeds? This could be a game-changer - but we will keep it simple this time.


I prefer to avoid traditional barbecue but of course, you can make sticks with the veggies and the marinade and try it that way. My health conscience tells me to bake the veggies carefully, so ideally under 200°C and when I use olive oil I bake them at 180°C. Black-burnt veggies are nothing for me, they taste like charcoal and are inflammatory like anything burnt... so let's keep it soft.


My choice of veggies: carrots, parsley root, sweet potatoes, broccoli. Other veggies like potatoes, parsnip, pumpkin would work great as well.


Then all you need is:

- a spice marinade for the veggies

- a mustard dressing for the extra BBQ touch

- smoked tofu for the proteins

- a bed of greens... to keep it green!

- any crunchy topping like roasted pine nuts/sunflower seeds/tamari-roasted almonds...


THE RECIPE


BBQ Veggies - for 1 large tray (about 4 portions)

Here are rough amounts, I like to freestyle when it's only about baking veggies ;)

a few pinches of smokey salt

some freshly ground black pepper

2 tsp smoked paprika powder

1-2 tbsp lupine extract or cocos amino (both are salty so do not add extra salt)*

Add olive oil (or better coconut oil if you want to bake at higher temperatures) and massage your veggies with the marinade.

For the fans, you can of course add pressed garlic and ginger. Alternatively, rosemary or cumin would work too.


*lupine extract is very watery and your veggies will get softer.

*coco aminos is a new condiement from coconut and tastes a bit like liquorice


Now bake your veggies in the oven about 25 Min à 180°C - probably less than 20 Min à 200°C.


Dressing

2 tsp mustard

1 tsp smoked paprika powder

some black pepper

2 tsp lupine extract

1 tsp balsamic vinegar

2 tsp olive oil

1 drop pure liquid smoke

Stir well and pour onto the baked veggies upon serving.

Hier sind meine Lieblingszutaten für BBQ-Gemüse:


Gemüse: Petersilienwurzel, Süßkartoffel, Brokkoli, Karotten (aber auch klassische Kartoffeln...)


Marinade: Olivenöl, smoked paprika, frish gemahlener Pfeffer, etwas Räuchersalz, Lupinenwürze (diese ist aber sehr flüssig und macht das Gemüse weicher) oder coco aminos Würzsauce.
Dann ab in den Ofen, etwa:20 min à 200*C25 min à 180*C
- füge Räuchertofu hinzu oder backe Tofuwürfel in der Marinade mit.


Dressing:

2 Tl Senf (mild bei mir)

1 Tl geräucherter Paprikapulver

etwas Pfeffer

2 Tl Lupinenwürze

1 Tl Balsamico

2 Tl Olivenöl

1 Tropfen Flüssigrauch (pur)
